Strawberry Eucalyptus, Watermelon & Wild Citrus Cocktail Shrub

Summer in a bottle - turn any drink into the ultimate pool side treat!

Collaboration inspired by the Scribbly Gum (Eucalyptus rossii) found along the Welcome Path of the Kennedy Garden at the National Museum of Australia, Canberra.

Pairing the aromatic bliss of Strawberry Gum Eucalyptus leaves with freshly sliced watermelon, add in loads of zest from wild foraged bush citrus - fermented until tangy, and then perfectly balanced with local Bellingen honey.

Simply pour 20ml over ice, add 200ml soda water & top with fresh mint to serve. Spike with gin if so inclined!

Ingredients: watermelon, wild strawberry gum leaf (eucalyptus olida), wild citrus, organic apple cider vinegar, organic raw bellingen honey, organic raw sugar, wild lemon myrtle (backhousia citriodora).
