The Zagara (which in Sicilian is the scent of citrus blossom in the air) is 52% Riesling, 46% Muscat de Petit Grains and 2% Grillo. 100% McLaren Vale fruit and all three vineyards are run organically, however only two are certified.
The grapes were destemmed and fermented wild in tank before being locked down for 150ish days. We then pressed them to some neutral french oak before gravity racking and settling in tank prior to being bottled unfined and unfiltered.The only addition being a bit of sulphur at racking.
