Hand picked, destemmed and wild fermented for five days on skins.
Very, very gently basket pressed and left to finish ferment. Held on yeast lees for six months to further build palate texture.
White peach, lychee, spring blossom and rose water. A dry, crisp and crunchy palate with highlights of kumquat, lime acid and florals.
An esky essential. Vegan, minimal sulphur added.
