'Red/White' 2020
Winemaker notes:
All of Sam's wines are made by hand, by Sam.
The 2020 Red/White started life out with the Shiraz and Sauvignon Blanc picked separately and fermented separately initially. Handpicked grapes desteemed but not crushed (no rollers) into 1 tonne open fermenters.
Both fermented on skins and hand plunged before being drained and combined mid ferment by siphoning (gravity). So while they start off ferment separately around half way through the ferments after 5-7 days on skins they are combined to finish off ferment as a liquid in stainless steel tanks. The wine remained there on lees till Spring when it is bottled off the sediment. Thats it!
Dry grown, own rooted grapevines farmed without herbicides or systemic chemicals. The wines are made without any additions, fining or filtration. No sulphur is added to any wines. No temperature control of ferments and no pumping of the wines. No gas is sparged into the wines to mix. All whites fermented on skins for varying amounts of time. No oak with any of the wines.
Varieties: Shiraz 55%, Sauvignon Blanc 45%.
