100% Red Semillon from Kuitpo, southern Adelaide Hills. Having a high yield in 2021, we were able to experiment a little bit more with this. We ended up with batches of whole bunch, de-stemmed, 50/50%, extended skin contact and 2 ceramic eggs filled with skins. The last 2 stayed on skins for about 250 days!! We brought all the components together about 3 months before bottling, with time to settle in and relax.
Super herbaceous, a soft complex and easy drinking version of Campari, without the bitterness and no need for a mixer with it. Perfect with a sunset at the beach with friends or family, enjoying life, toasting for more to come.
