Mutant 2022

Winemaker notes:
Our 2022 Mutant is a true field blend of interplanted Semillon and Red Semillon from Alkina vineyard, just north of Greenock. The vineyard is certified organic & biodynamic and the wine was made without any additions besides a small sulphur add just prior to bottling.

The fruit was fermented wild on skins for 9 days before I basket pressed it to tank. We then hand bottled 905 bottles by gravity before hand labelling with love.

Smells and tastes like stone fruits- apricots, yellow peaches and oranges. Is soft and smooth on the palate (went though Malo before going to bottle).

This is essentially a white wine made like a red wine so it can be served at room temperature when the weather is cooler, or it can be refrigerated and served cold when the weather is warmer. A natural and harmless sediment will settle at the bottom of the bottle, you can simply give the bottle a mix before opening to re suspend that sediment or pour the clear wine away from the sediment. Completely up to you, it’s like a Coopers Pale Ale!
