Handpicked early at 8 baumé, destemmed and wild fermented in stainless steel; the Shiraz and Merlot components from regional NSW in 2018 and 2019. The remainder of the wine is made up of Tannat from New England in 2017, which was fermented on skins for 10 months and remained on lees in neutral oak for 18 months. Blended towards the end of 2020. Varieties: Cabernet Sauvignon, Mourvèdre, Shiraz, Petit Bordeaux.
Organic, wild yeast, not filtered or fined. 170 cases produced.
