Balmy Nights wines are sourced from various regions around New South Wales. The wines are made with minimal intervention, taking cues from natural wine, with freshness, drinkability and intrigue as the touchstones.
Pressed into stainless steel for wild fermentation then remained in tank on lees for 5 months prior to bottling. A little unfermented juice was thrown in to kick start the carbonation in the bottle and the result is a perfect, fresh pet-nat.
