A blend of Semillon and Sauvignon Blanc, the former from from Magpie Springs farm in the Hope Valley and the latter from Totness as above. The Semillon was destemmed and sealed for one month in stainless inox then aged in barrel and ceramics. The Sauvignon Blanc was bled off the destemmed fruit for the tetes and then aged in barrel.
No added SO2.
