This 2022 Pét Nat blend was a new experiment for us. 48-hour skin-soaked Sauvignon Blanc blended with with the first harvest of our new red grape Mataro. The Mataro was hand harvested early, whole-bunch pressed for minimal colour extraction, creating a white wine from red grapes! The two ferments were combined slowly at just the right moment and just over 350 cases were hand bottled on a weekend in the middle of vintage (shout-out to Juls, Marj and Mim!) with zero added sulphur.
Delicate, crisp, textural. Tastes like orange sherbet, baked apple, stone fruits, watermelon rind.
50/50 Sauvignon Blanc + Mataro Blanc de Noir. ZERO Sulphur.
