Winemaker notes: 
Skin-contact Sauv Blanc + Gris.

Wild fermented separately without adjustments; The Pinot Gris component remained on skins for 2 weeks in stainless steel & left to it's own devices. Whilst the Sauvignon Blanc was on skins for 16 days, seeing pumpovers occur twice daily for the first week, and then left to macerate for the remainder of time on skins. Both parcels were pressed, blended & returned to stainless where the resulting wine remained on lees for 5 months before bottling. Unfined & unfiltered.

Farmed organically though not certified & machine harvested from Hilltops, NSW.
